Golden Potato Balls

(yield 25, 3 1oz balls portions)


2 1/2 cups dehydrated (for mashed potatoes) potatoes
1/2 cup non-fat, dry milk
2 1/2 tsp salt
6 1/4 cups boiling water
1 1/4 cups flour
(an additional 3/4 cup flour for rolling the balls in)

  1. Combine potato granules, milk, flour and salt.
  2. Pour water into mixing bowl.
  3. On low speed, rapidly add dry ingredients.  Mix until thoroughly blended, approximately 1 minute.
  4. Shape mixture into balls, about 2 tablespoons each.  Roll in flour.
  5. Fry in deep fat (375 degrees F.) until golden brown, 1 or 2 minutes.
  6. Place in a single layer in shallow pan.  Roast in oven at 350 degrees F. for 5 minutes.

Note:  I remember sometimes cutting into these and they were full of dry ingredients that would then fall out into the plate.....ugh!  dcb
